Make it a special night with easy, elegant appetizers. The Blue Bacon Stuffed Mushrooms!

What you need:

• 3 strips bacon
• 6 large mushrooms
• 1 tablespoon butter
• 1/2 onion, diced
• 1 clove garlic, sliced
• 3 ounces cream cheese
• 3 ounces blue cheese
• 1/3 cup bread crumbs

Procedure:

1. Cook bacon strips in a large skillet over medium heat until crispy; drain on paper towels. While the bacon is cooking, remove stems from mushrooms. Set caps aside, and chop stems.
2. Add butter to skillet with bacon grease. When melted, stir in mushroom stems, onion, and garlic. Cook, stirring frequently until the onions caramelize, 15 to 20 minutes.
3. Preheat oven to 350 degrees F (175 degrees C). Spray a small baking dish with cooking spray.
4. Once the onion mixture has reached a deep, rich brown color, place into a blender along with bacon, cream cheese, blue cheese, and bread crumbs. Blend on low until ingredients are roughly chopped and evenly combined. Stuff cheese mixture into mushroom caps and place into prepared baking dish.
5. Bake in preheated oven until bubbly and lightly browned, 10 to 15 minutes.

I am a bit anxious about the New Year celebration. I am not pretty sure who will finance the food. My son said he doesn’t have any money at all. Then, my daughter also said that. Now, who I will turn my attention too. My husband doesn’t have regular income. I can only rely on him on our daily consumption. Sigh!

Well, I will just have to relax. For sure those kids can’t bear the fact that their younger siblings are expecting to celebrate New Year. As for me, I’ll continue checking and comparing the insurance quote from different companies. It is the one way to get good savings.

New Year is just three days away. Now I have to thoroughly clean the house and fix whatever that needs fixing. It is a tradition that cleaning the house will invite more blessings for the following year. It also wards off negative feelings from the previous year. Some even changes everything inside. But, I can’t do that for now because I don’t have the right finances for that.

If given a chance, I would want to renovate the toilet and bathroom. I want to change the gloomy tiles to something brighter and replace the toilet by one of those Toto toilets I found earlier. Then, repaint the walls and finish it by accessorizing. However, I can’t do that either. The only thing to do is general cleaning. Good thing I can still do something.

Actually, I am just looking around the web for some insurance. And I got interested with this one. I even consider buying a policy. But, I will have to postpone that until we will buy a house. For now, I will continue researching for the best insurance that fits my need.

Another thing that irks me every time it rains are the gutters of our neighbors. I don’t know if they hate the owner of this house, which is not me, or just taking advantage of their kindness. I’m always asking myself why their gutter is already taking part in the property. The other one is worse. He purposely situates the gutter ending where the water flows right in our backyard. So, every time it rains all the water coming from their roof goes directly to us.

I can’t confront him with the problem because for many years I’m leaving here, I know his temper and he owns a gun. I don’t want to create a bigger problem. He might shoot me for trying to solve the problem. That is an idea that is not so good since this is not my house. The owner himself could not get rid of him even if he is just squatting part of the owner’s property.

I am just praying every day that he will call gutter service like that of Gutters Virginia Beach to place the gutter where it should be. For now, I’ll try to be very patient with that. Plus, it’s Christmas time I should not let anything ruin my day. I must celebrate this time of the year happiness. Merry Christmas!
