Chicken with Caramelized Cauliflower and Green OlivesCauliflower gains incredible sweet flavor when roasted. Here, it is paired with healthy chicken and tossed in a homemade olive, almond, and parsley pesto-like sauce.

What you need:

  • 1 head(s) (2 1/2- to 3-pound) cauliflower, trimmed and cut into 1 1/2-inch chunks
  • 2 tablespoon(s) extra-virgin olive oil
  • Salt
  • Pepper
  • 1 pound(s) chicken breast tenders, cut into 1 1/2-inch chunks
  • 1 teaspoon(s) freshly grated lemon peel
  • 1/4 cup(s) slivered almonds
  • 1/3 cup(s) pitted green olives, rinsed well
  • 1/4 cup(s) packed fresh flat-leaf parsley, finely chopped, plus additional for garnish

    always look forward to weekendsIt’s Friday once again, my favorite day of the week. I always look forward to weekends where I can be with all my five kids especially on Sundays. My eldest only visits us during that day because she’s a busy girl; thankfully she still has that day for us.

    Ow well before I go on to do my usual day activities, I decided to drop some love to my fellow bloggers, read phentermine reviews and other articles written by them. It’s a good way to learn new things and other people’s experiences. We all know that being a plain housewife is sometimes boring. So, the more information I get, the more I feel better and knowledgeable.

    restless nights and stressful daysLast October 2009, I really freaked out when my daughter asked me about the best prenatal vitamin brand. I thought she is really pregnant because her tummy increased in size. But, I never confronted her about it because we already agreed that I will not meddle in her life. Also, doing so will only show that I don’t trust her like she always says.

    It took me at least two weeks of restless nights and stressful days before I finally accepted the fact that it could happen. Months have gone by and yet she still looks the same and her waistline is even getting smaller. I’m relieved that she’s not showing any signs of pregnancy. Plus, she even says that one of her friends is getting ready to give birth by March. It is such a wonderful feeling knowing that I can really trust her.

    my weight loss process struggleFor those who know me, they knew that I am struggling to get off my weight for ages. And, last Saturday I started cutting down my food intake after my ankle disturbs my supposedly happy life. I also drink lots of green tea as I’ve heard it is a good appetite suppressant and speeds up metabolism. Well, I thought I will be able to do this until such time I will find the best weight loss products. I think I’m wrong about that.

    I’m supposed to be happy because finally there is something I can do with my weight. But, I am not. In fact, I am very sad because I am starving myself especially if my husband cooks good food. If not for my ailing ankle I would opt to stop this as I am beginning to feel depressed.
